Gruyère AOP, a world-famous cheese, owes its name to the picturesque region of La Gruyère (Gruyère region) in the Swiss canton of Fribourg. This delicious cheese has been produced according to the same traditional recipe since 1115 and has conquered the palates of cheese lovers over the centuries. Today, it is not only produced in the region of La Gruyère, but also in the cantons of Fribourg, Vaud, Neuchâtel, Jura and some municipalities in the canton of Bern.

Le Gruyère AOP was awarded the coveted protected status of an AOC (Appellation d’Origine Contrôlée) on July 6, 2001. This designation has been recognized throughout Europe since December 2011 and was changed to “Appellation d’Origine Protégée” (Protected Designation of Origin, AOP). The entire production of Gruyère AOP is carried out in accordance with strict specifications, which are required for all AOP products. This ensures compliance with traditional production methods and the quality of the cheese.

The name “Gruyère” is not only protected within the AOP, but also worldwide by numerous other agreements. This ensures that genuine Gruyère AOP retains its unmistakable character and that cheese lovers all over the world can enjoy a piece of Swiss cheese culture.

In the interactive exhibition “Gruyère AOP – An experience for the senses” at the foot of the town of Gruyères, you can immerse yourself in the fascinating world of Gruyère AOP and uncover the secrets of its production. Learn more about the 100 years of knowledge that has gone into this exceptional cheese and the various stages of its creation.

The specifications, with their strict requirements for quality and traceability, as well as the maturing period and care in the cellar for at least 5 months, make Gruyère AOP a very special treat.

A highlight of your visit is to watch the master cheesemakers at work as they use their skill and experience to give Gruyère AOP its unique character. You can experience this fascinating spectacle between 9:00 and 12:30.

The tour lasts 30 to 45 minutes and is accompanied by practical audio guides. The charming cow “Cerise” accompanies you through the captivating world of Gruyère AOP. The audio guides are available in thirteen languages and paper translations are available in eight languages.
