Appenzeller is an exquisite Swiss cheese named after the picturesque Appenzell region, where cheese has been made since the Middle Ages. The raw milk for Appenzeller cheese comes from the farms around the imposing Säntis mountain.

Interestingly, the name “Appenzeller Käse” is not a protected designation of origin under Swiss law, but a collective trademark of the Appenzeller Käse GmbH variety organization, which is based in Appenzell. Milk and cheese producers, the cheese trade and the Appenzeller Käse Foundation are organized under this brand.
